Drop Biscuits

  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon sugar
  • 3/4 teaspoon table salt
  • 1 cup cold buttermilk (or a combination of plain yogurt and milk)
  • 8 tablespoons unsalted butter, melted and cooled slightly
  • Preheat the oven to 475°F.

    Combine the dry ingredients. Combine dairy and butter, and let stir until the butter has formed small clumps.

    Add the wet ingredients to the dry ingredients and stir until just mixed. Drop 1/4 cup scoops onto a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the tops are golden brown and crisp. Makes about 12 biscuits.
